  • 2 cups sushi rice
  • 2 cups water
  • 3 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 oz. sashimi-grade fish of your choice (tuna, salmon or yellowtail)
  • 1 avocado
  • 1 small cucumber
  • 2 green onions
  • 1/2 cup edamame
  • Soy sauce, to taste
  • Wasabi, to taste (optional)
  • Sesame seeds, for garnish
  • Roasted sesame oil, for garnish
  • Furikake, for garnish

Instructions

  • Rinse the sushi rice in cold water for a few minutes until the water runs clear. Then, combine the rice with 2 cups of water in a saucepan. Bring to a boil, then reduce the heat to low and cover. Cook for 18-20 minutes, or until the water has been absorbed and the rice is tender.

  • While the rice is still hot, mix in the rice vinegar, sugar and salt. Stir until the liquid is well distributed, then let the rice cool.

  • Cut the fish, avocado, cucumber, and green onions into bite-sized pieces. Cook the edamame according to package instructions.

  • Once the rice is cool, divide it between two bowls. Arrange the fish, avocado, cucumber, green onions, and edamame on top of the rice.

  • Drizzle soy sauce and sesame oil over the bowls, and garnish with sesame seeds and furikake. If desired, add a dollop of wasabi.
